Vegan lunch bowl with grapes, seaweed, watermelon and avocado

Ingredients

  • 1 handful of red grapes
  • 1 handful of watermelon cubed
  • 1 handful of spinach
  • 1 handful of frozen peas (cooked)
  • 1 handful of green beans and courgettes
  • 1 packet of crispy seaweed
  • 1 handful of your favourite grains and greens (I have wheatberries, lentils and edamame)
  • extra virgin olive oil
  • salt and pepper
  • 1/4 avocado
  • 1 handful of rocket
