Warm Harissa Butter Bean Salad with sticky Balsamic Lentils & Feta

Savour the lively flavours of our Warm Harissa Butter Bean Salad, a delightful dish blending the creamy richness of butter beans with the spicy zest of harissa. Finished with sticky balsamic lentils and crumbled feta, this salad offers a perfect balance of taste and texture, making it ideal for a satisfying meal or a hearty side.


Ingredients

·      70g butter beans, drained and rinsed

·      ½ Tsp Harissa

·      1 Tbsp Maple Syrup

·      2 large handfuls cavolo Nero, finely chopped

·      1 250g Packet of precooked Puy/ Green Lentils

·      1 small pear, deseeded, cored and sliced

·      50g feta cheese, crumbled

·      1 Heaped Tbsp of Pomegranate Seeds

Dressing

·      1 tbsp olive oil

·      2 tbsp of balsamic vinegar

·      ½ Orange, zest and juice

·      Salt and pepper to taste

·      Mint Leaves to garnish

 

Method

1.     Steam the cavolo nero for 2-3 minutes.

2.     Add the butter beans into a bowl and add the harissa and maple syrup. Season with a little salt and pepper to taste.

3.     Mix the dressing together in a small bowl.

4.     Add the rest of the ingredients into the bowl excluding the feta. Add dressing to salad and toss to combine. Serve with crumbled feta on top.
