Pan-fried Halloumi with peas, watercress, tomatoes and basil

So happy to be eating Halloumi again. I had thought it was too high in fat for me to eat and so banished it from my eating plan. But now I am eating higher fats, I have been eating it at least once a week. It’s easy to make, just pan-fry in a little oil until it goes brown. I don’t bother browning it on all sides, I just a couple will do. Then tossed it in a bowl with the baby watercress, tomatoes, peas and basil. Delicious. Lorraine x


  • 1 handful of halloumi
  • 1 handful of baby watercress
  • 1 handful of baby tomatoes
  • 1 handful of basil
  • 1 handful of frozen peas cooked
  • Drizzle of extra virgin olive oil
  • salt and peppe (chilli flakes optional)
